This is for our Thanksgiving potluck luncheon at work. Probably 40 will attend. I'd prefer a vegetable dish, not too heavy. Most folks are making broccoli casserole, green bean casserole, etc... Any suggestions for a healthier vegetable dish?

I like smoke flavored beans, so I was thinking of putting some black eyed peas in the slow cooker. Ill season it well and add some smoked turkey legs. When its almost done I'll add some Turkey Sausage. Ill also prepare a pot of white rice. I dont think I need to cook some meat, because meat is already in the beans. What do you think?? Rice with beans and sausage sounds good to me kinda New Orleans-ish.

With a nice tall glass of RED Kool-Aid. LOL LOL

My dad is diabetic and I feel so sorry for him whenever Christmas comes around because he used to adore chocolate and all the luxury festive food you can buy. I'd love him to still be able to enjoy it a bit without doing himself any harm so any ideas would be much appreciated!

I find it hard to credit that some people are so lazy they will buy stuff like pre-chopped vegetables. I mean, how long does it take to chop a carrot?!! And ready-prepared bolognese sauces in jars: how long does it take to chop an onion and open a can of tomatoes, cos that's basically all that's in there.
And 'easy-cook' rice in stupid little plastic bags: what's all that about? Rice is already about the easiest thing to cook you can possibly find! This kind of thing is such a waste of money.
