Once you get 10-15 miles away from Baltimore, you can find butchers in towns like Westminster, Bel Air, et al.

used to live in baltimore- try fells point meats- they work mainlyw/restaurants but can get odd cuts/specialty items for you. also springfield farms north of the city has mouth watering free-range, grassfed, organic - all different cuts of meats and poultry- i highly reccomend them and they always deal directly with the public

go to your local market and ask your butcher. they might do it on the side or they may know of a place.
