Pork Schnitzel. If it's for a potluck cut the deboned porkchops into pieces 2"x3" to 3"x3" to keep the price down unless you don't mind it being spendy. Set two large plates and a small bowl on the counter. Place approx a cup of enbleached flour in one, approx a cup of store bought bread crumbs in another, and three beaten eggs in the bowl. You may have to add ingredients as you use them up..you can avry this based on how many porkchops you are using. Also, any spices you plan to add put them in the flour and mix them around. I put a little salt and pepper in the flour. In a frying pan with sides at least 2.5" inches tall pour enough cooking oil so that it is approx 3/4" deep. - Next dip a porkchop into the egg making sure to coat both sides. - Dip into flour coating both sides. You can pick flour up in yoru hand and press it into the meat with the palm of your hand to get it on there really good. - Dip floured chop back in egg then dip into bread crumbs. _ Place that chop on a plate and continue the process until all are coated. For frying you want the oil the same temp as if you were going to fry frenchfries or a hair lower. Place chops across bottom of pan and cook for about 7 minutes or until the bottom side is golden brown. Flip and cook another 7 minutes or the same amount the other side needed to brown. When you are done you will be left with a perfectly cooked moist porkchop with a delicious breading. NEVER use this breading recipe then palce them in the oven..thet do not turn out very well.

Pasta Salad
(You won't believe how easy this is, and how delicious. Think of it when you have leftover meat or poultry, especially after Thanksgiving.)
1/4 cup olive oil
3 tablespoons red wine or balsamic vinegar
1 teaspoon salt
1/2 teaspoon basil
a few drops hot pepper sauce
1 clove garlic, minced
6 ounces linguini broken into thirds, cooked al dente, rinsed in cold water
2 cups cooked roast beef, chicken, turkey, etc. cut in strips
1 cup thinly sliced celery
3 medium tomatoes, peeled, seeded and coarsely chopped
1 large cucumber, cut in half lengthwise and thinly sliced
5 ounces fresh mushrooms, thinly sliced
In a jar with tight fitting lid, combine oil, vinegar, salt, basil, hot pepper sauce, and garlic. Shake well to blend.
Combine linguini with remaining ingredients

Maybe roasted Asparagus...or a potato dish....I make this dish that is cubed potatoes, onions and green or red peppers.......you cut them so they are about the same size.....mix about 1/4 cup lite mayo and some seasoned salt with the veggies cover bake for about 45 min then remove cover and cook for about 20-30 min longer to help brown......these have great flavor and are low cal too.

you could consider going with the flow of things and make some kind of vegetable dish or..
bring something light like a vegetable party tray or fruit tray or...
bring pasta. pasta salad to be exact.
macerioni noodles
green olives(optional)
mozzeralla cheese
bottle of italion dressing (newmens)
package of salmon ( kind that comes in a can or in a package) found by the tuna packages in stores.
put whole box of macerioni noodles into pot of boiling water. after noodles are done put themthrough a stariner, then put them in a large bowl. get the salmom and put it in there. put about half the bottle of green olives into the bowl along with a good amount of cheese. finally pour as much dressign as ou see necesary into the bowl and mix until all the ingrediants is mixed.
walla, pasta salad ( if you think you need to add some more of one ingrediants into the pasta then go ahaed. you see, there is no exact measurment of how much of each ingrediant to put in)

Ahh, thats so funny, because before i read the details I was gonna say broccoli casserole. Hmmm... *thinking*....why don'y you make some tuna stuff jalepenos? That would be good.. They are sooo good. Do that!!

pasta salad:
1 lb spiral pasta, blanched brocolli crowns, diced sm green pepper, diced sm. red pepper, 1/3 cup fresh parm cheese, approx 6 oz sliced olives, Italian dressing (I like Ken's w/the aged romano cheese).
mix & enjoy. Always a big hit.

try a 3 bean salad drain the beans add 1 choped onion and itailian dressing and some sliced mushrooms and sliced green peppers....the beans can be of your choosing i use black kidney and great northern and pintos work well....

a spinash dip, just look for the reciepe on the back of liptons vegetable dip packets, its easy to make and if put in a hollowed hawaiian bread looks great
