With the sharp point of a knife, make an X on either end of the chestnut. This allows steam to escape, and prevents it blowing up. Make sure the cuts go thru the shell. After that, you can roast them in a 450 degree pre-heated oven for about 10 minutes. You can also microwave them, as long as you cut them like above.

Take a sharp knife and cut the brown skin at least 1/3 the way around the nut.
It doesn't matter too much if you cut the flesh as well or not, 'cept if you need whole roasted nuts for certain druidic rituals that are becoming fashionable of late.
You may also find little contraptions that look a bit like garlic presses, that punch a line of small holes in the skin.
In a nutshell [ :-) ] you want to prick the skin so that the nut won't explode and make it easy to break it out of the skin oncew roasted,

Before roasting or any other type of cooking method make sure you cut an "X" through the shell to prevent them from exploding from interior steam buildup while roasting.

i like to eat chestnuts that have been soaked in salt water. i have never had them roasted before.
