i am doing a project for a class... and we need to research a culture and traditions... i want to do italy... and breakfast cuisine... i was hoping to do croissants and coffee... where can i get a good italian coffee for not too much money... or how can i make something... i just have a coffee pot... no espresso machine... so i need something kinda easy...

I can't seem to find pulzerized rice anywhere...I want to make meghli, a Lebanese sweet that we make after babies are born. I've tried to grind the rice in a food processor and it doesn't work, dry or cooked.
Any ideas? Will a coffee grinder work? A pestel?

Cucas Cookie Recipe?

There is a cooki in puerto rico called Cucas.

This is my favorite cookie which I've only had purchased. It is a very hard, crunchy, dark brown flat cookie. It sort of has a molasses and/or ginger taste to it.

I would love to be able to make these from scratch. I have searched for months on line and I have posted this question before. So far I don't know ANYONE who has a recipe.

Apparently there is a site with a recipe for Galletas de Cuca which is Costa Rican but it is completely different from the one I am looking for from Puerto Rico.

Please help!!!! SOMEONE has got to have the recipe. If you live in Puerto Rico or are in Puerto Rico I would very much appreciate if you could ask around maybe at the local Panaderia or an older person. It seems like our elders in Puerto Rico have the recipes to all the foods we are starting to lose over time!

well is not, I am Mexican and have tried it twice, one out of curiosity the other out of hunger (it was the only place we could find open), let me tell you it is the most discusting thing I have ever tasted, and I hate that people in the U.S. think that is Mexican food, you need to find authentic Mexican food and try it, you will love it.

I'm thinking of making my own whole-wheat flour (not corn) tortillas by buying a tortilla press and I wonder if anyone has any experience with how easy this is to do?

Also, I'd like to find a high fiber recipe for homemade flour tortillas. Most are very low in fiber (1-2 grams). I can buy tortillas with 4-8 grams of fiber per 8" tortilla but cannot find a recipe for them. The problem is that they are quite expensive to buy and I assume they are much cheaper to make.
