The thing aout Greek food throughout history is that the Greeks did not really develop any new food dish, they borrowed food dishes from many Mediterranean and Middle East cultures but combined them with different spices, especially cinnamon. The Greeks were one of the few cultures of the ancient world to travel extensively and they combined spices from different parts of the world and combined them in different dishes. I have often been struck by how different Greek stuffed grape leave, dolmades, are different from Lebanese, Syrian, and Iranian grape leaves are. Greece was a crossroads of the spice trade and so was Thailand in Asia.
