DELICIOUS! The only true Prosciutto comes from Parma, Italy. but that form other areas is just as delightful and tasty.

There are several kinds: Prosciutto is the famous ham that is cured but not cooked - I think it is technically bacon for that reason and I sometimes use it as such, but you do not have to cook it. It is traditionally sliced paper-thin (they say it should be sliced so thinkly you should be able to read through it) and each slice must be separated from the other. Speck or Alto Adige Speck is a type of Northern Italian bacon or ham that I love particularly - it can be cooked or eaten like prosciutto. It is darn hard to find but you can try Niman ranch. Pancetta is the most common bacon - it has to be cooked. And, I understand that Guanciale is another type but I have never used it.

Italian Bacon is Pancetta, its thick bacon or pork tastes lovely when a little salt is added and its grilled.

The most famous italian ham is the prosciutto from Parma. The italian bacon that come in a roll instead of slices are called pancetta.

Prosciutto is ham. Prosciutto crudo or "raw ham" is salt-cured ham; prosciutto cotto or "cooked ham" is what we would call boiled or baked ham. And bacon is pancetta.

Ham is called Prociutto (Pro-shoo-toe)
Bacon is Pancetta (Pan chet tah)

Both are not smoked like american ham and bacon

PORSCUTITO cured ham salted and air dryed personaly i trim off any fat on it and rolll it on some motzeralll cheeese log,s and serve with some mellon and prchoto chesse as a apptiser
