Cucas Cookie Recipe?

There is a cooki in puerto rico called Cucas.

This is my favorite cookie which I've only had purchased. It is a very hard, crunchy, dark brown flat cookie. It sort of has a molasses and/or ginger taste to it.

I would love to be able to make these from scratch. I have searched for months on line and I have posted this question before. So far I don't know ANYONE who has a recipe.

Apparently there is a site with a recipe for Galletas de Cuca which is Costa Rican but it is completely different from the one I am looking for from Puerto Rico.

Please help!!!! SOMEONE has got to have the recipe. If you live in Puerto Rico or are in Puerto Rico I would very much appreciate if you could ask around maybe at the local Panaderia or an older person. It seems like our elders in Puerto Rico have the recipes to all the foods we are starting to lose over time!

Janette, thank you for your reply but I have no idea what kind of recipe you just turned in BUT it is definitely not for Cucas cookies from Puerto Rico.

I asked my Puerto Rican friend to ask her "abuelita" .... hope this is what you are looking for... baking them twice is the key to cucas.

1 cup softened butter
1 cup packed brown sugar
1 egg
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/8 teaspoon salt

Cream together butter and brown sugar. Add egg and vanilla and beat well. Mix together dry ingredients and add, combining well. Drop by teaspoonfuls onto greased cookie sheet. Bake in 350 deg F oven for 6 to 8 minutes. Then bake for 10 minutes on insulated cookie sheets to make them really crispy. The cookies will puff up, then really flatten into thin hard disks. Makes 4 dozen.

Save it of course! I don't want it too soggy! I jam my whole hand into the cup and try to grab it or use a spoon if there is one nearby! Unless I'm in a bad mood, then I just let it drown cause I'm too lazy to get it out. What about you.

2 tazas de leche
1 paquete de galletas de vainilla
azúcar al gusto

Para 3 porcion(es)
Tiempo de preparación: 5 Min.
Tiempo de cocción: 5 Min.

INSTRUCCIONES

en una olla calienta las 2 tazas de leche, luego agregas azúcar a tu gusto y cuando esté a punto de hervir desmenuzas las galletas y se las echas a la olla. Sigues revolviendo como si estuvieras haciendo avena.


SUGERENCIAS Y COMENTARIOS

al final debe tener la consistencia de un plato de avena. tú decides si más leche, más galleta o más azúcar.

350 gr. de harina.
125 gr. de azúcar glas.
2 cucharadas de azúcar avainillada.
1 pizca de sal.
la ralladura de un limón
200 gr. de margarina
2 cucharadas de cacao en polvo.
1 clara de huevo para pintar

Para 60 porcion(es)
Tiempo de preparación: 1 Hr. 30 Min.
Tiempo de cocción: 30 Min.

INSTRUCCIONES

unir los ingredientes secos menos el chocolate en polvo, hasta que estén bien mezclados. Agregarle la ralladura de limón y la margarina a temperatura ambiente y amasarla. Partir por la mitad la masa y a una de las partes agregarle el cacao, una vez lista la masa se coloca en la nevera por 1 hora. Se forman unas tiras largar con la masa blanca al igual con la masa oscura y se intercalan pegándolas con claras de huevo. Una vez listas las galletas se colocan en una bandeja con papel parafinado y se colocan por 1/2 hora en la nevera antes de meter al horno a 200ºc o 350ºf por 15 minutos.
