My cousin used to make some meat called "carne de indio" which means indian meat. It was made back in the days by the natives of Mexico and it was not cooked over the fire, but by the juice of limes. Does anyone know if that would be cooked completely?

If you think so, then you should try it. it is really good on tostadas.

You will need ground beef, lime juice, roma tomatoes, onions, jalapeno peppers, (the green kind), and cilantro. mix all together, add salt to taste, and leave in the sit for a few hours until the meat turns gray. Preferably about 4-6 hours. Top on tostadas and enjoy.

I want the one found in American Chinese restaurants, the one that is basically fried chicken with a brown gravy and topped with nuts. I have been living in Japan for 8 years and I want what I know is NOT authentic Chinese food; rather it is something that I ate for years and just enjoyed. Anyone worked in an American Chinese restaurant out there? Please tell me what I need to do to make it at home. I am pretty handy in the kitchen, and living in Japan there's no end to Asian markets, so I am ready to try.

While making taquitos with store bought corn tortillas is easy. I am having a difficult time with making them with home made tortillas. I use the recipe for tortillas on the back of the masa package. The tortillas turn out delicious (I use a tortilla press and cast iron pan for cooking). When I try to make taquitos though they don't roll well and crack to easily (I have used the steam and also the oil and microwave method to soften them before frying).

Saw a TV programe ages ago where the chef had tiny cutters in various shapes, like little stars and flowers and letters of the alphabet to make veg like carrots more appealing to children. I have been looking ever since but never found these little tools. Any ideas. It was a Chinese stir fry he made and it really looked good.

I am half korean and I have only one craving, Kae-jang, the kimchi made of fresh crab and I was wondering if anyone knew if it was ok in small amounts or if I should just avoid it till I have the baby. My poor chicken is frying - coated and everything - when I turned it - it started bleeding. I cleaned them and everything!!! Did I do something wrong? Will the cooked bleeding be bad to eat?

There is this Chinese dish that I get at a restaurant in my mall sometimes, that I love. But I don't know what its called. We are going to a another Chinese restaurant tonight, and I want to order the same thing, but I'm not sure what the dish I am thinking of is called... so if any one out there has any idea of what its called, that would be great.

Its a chicken dish, and it seems like the chicken is cut up into bite sized pieces, fried with a thick crust around it, and then the sauce that goes with it is a thick, dark red type of sauce. Its a little sweet, and is sometimes a little spicy.

Anyone have any idea what I'm talking about? Its not sweet and sour, and its not Sesame.
