My cousin used to make some meat called "carne de indio" which means indian meat. It was made back in the days by the natives of Mexico and it was not cooked over the fire, but by the juice of limes. Does anyone know if that would be cooked completely?

If you think so, then you should try it. it is really good on tostadas.

You will need ground beef, lime juice, roma tomatoes, onions, jalapeno peppers, (the green kind), and cilantro. mix all together, add salt to taste, and leave in the sit for a few hours until the meat turns gray. Preferably about 4-6 hours. Top on tostadas and enjoy.

The acidic content in the lime juice is sound science for bacterial control. One of my favorite summer dishes is Ceviche.... I make it myself all the time.

Ceviche is raw fish marinated in lemon and lime juice. I have ate tons of Ceviche and yet to get sick. The acids are supposed to "cook" the meat. I have yet to try raw ground beef. I love my steak bloody...but I know ground beef and eating it raw is not for me.

edit: ground beef has too many processes that can take on bacteria. Steak is basically butchered and sold, no processing. nothing that can contaminate it. I sear my meat on the BBQ and then eat it. Raw ground beef is no bueno.

blood and juices make the steak....um ummm ummm yummy anyone that puts A1 or Whorstishire on a bloody steak, doesnt know how to eat good meat.

It is not 'cooked', but it is safe to eat, as long as it is marinated long enough.

The enzymes in lemons, coconut milk and kiwifruit/'kiwis' will do the same - as will vinegar.

If, on cutting/slicing the meat, it is pink in the middle - then be cautious, otherwise - ENJOY!

The acid IS "cooking" the meat. totally safe

bacteria growth in red meat is killed by heat .. temperature ... I would not feel safe eating something that was 'cooked' in lime juice.
