If God is all knowing, then why did he mess with the garden of eden in the first place? Because he knew that the serpent would tempt Eve (why didn't he stop the serpent?), and that she would eat the fruit, and give some to Adam, but God had to ask Adam and Eve about what they did. Same with the flood. He knew what would happen, and why, and since he is all powerful he could have prevented it. So why did he do all of that pointless stuff in the first place?
