RCIA is the class that will formally instruct you in Catholic teaching and the faith of Jesus Christ. It is very important that you complete this. I'm 32 years old and went through RCIA 2 years ago. It was the best thing I'd ever done for myself.
Easter, I think, is traditionally the time of year when new Catholics are officially brought into the Church. Oh, what a blessed day for you! You don't know how lucky you are.
Learn all you can in RCIA. You'll be glad you did. Welcome home.

If you've never been baptized, they probably want you to get through a majority of the classes so that you are SURE without a shadow of a doubt that you understand and want to become Catholic.
The classes will teach you not only the religious beliefs and traditions of the Catholic religion, but also the dogmatic beliefs. This would include reasons such as why you can only take communion in a Catholic church if you're Catholic (or another religion that believes in transubstantiation).
They probably also picked Easter because there will be a LOT of other Catholics in the community that will attend Mass on Easter Sunday, and they want to give THEM the opportunity to know that you will be entering the community, so that they can offer their support.

Part of the class schedule is going to Mass during the classes. They want to make sure that you don't just show up for the baptism and then never come back to the Mass. This is probably what so many of the people who say they were former Catholics do. They never really understood their faith. Scripture says that they were never with us is why they left us . Not that that is what you are going to do but, it happens. The classes are very interesting. You will learn about the real Catholic Church and you will become very proud of her. The Catholic faith is the original and complete Christian faith.
As such, there is a lot to know about it.
Don't worry about the wait for baptism. God will understand.
Just do it.
