Can a UK passport holder apply for and process a Chinese Business visa whilst in Australia on a Business Trip? (non-Australian resident)

I and my husband are planning to go the HK for a weekend vacation but we really don't have much in mind as to where to go aside from the Disneyland itself. We just need a list of places to visit (as well as how to go there and stuffs to do while in there) to maximize our 3 days vacation. This will be sometime October. Suggestions, personal experiences and references will be greatly appreciated.

I heard you can only take with you one calculator, one camera, one pet, and so on. Furthermore, the restrictions for sending in gifts to chinese residents are tough, cumulatively at most 100 yuan a year. How much cash can you enter the Chinese border with? Traveller's checks for how much? Do you need to keep the receipts of every good/service you buy in China, and present it upon exit? Can you get away with paying export/import taxes? If so, how expensive is it? Can you get money sent to you by international bank transfer or western union?

Has anyone had personal experiences? Consequences of carelessness?

I'm going to be in Beijing for 8 days at the end of October. I'm trying to figure out how I should spend my time. I've never been to China (or the rest of Asia) before.

My girlfriend points out that I speak no Chinese of any sort, and all the guided tours and touristy spots seem "doable" in 4 days, including the Great Wall, so she thinks I'll get bored if I stay 8 days, and I should head to some other Asian city for part of my stay. I could do that, but my departing flight has to leave from Beijing, and I don't want to spend more than $400 leaving Beijing and coming back.
