What is your favorite scale to model in, and why?

All I know how to do is use size 8 knitting needles, cast on, knit, and I think I can purl, even though when I purl it just looks like a bigger knit stitch.

Does anyone know what these are called, or where I can find a pattern:
Basically, it would be different body parts cut out of paper, with all the different parts connected together with brads. So that all the limbs are movable.
