When things go "stale" they either go hard or soft. Like biscuits go soft and bread goes hard?!!!! Any ideas why?

Some says, Thai Food and Some says, Cambodian food.
Either Thai or Cambodian, the dish ingredient are the same but
for one exception, Cambodian prepare with mild hot all the way and Thai prepare with hotter. Today, Thai food is more wellknown than Cambodian because Cambodian don't care who's who prepared the food.
