When things go "stale" they either go hard or soft. Like biscuits go soft and bread goes hard?!!!! Any ideas why?

I think it has something to do with the sugar content


biscuites ( cookies) have a lot of sugar in them
Sugar attracts water ( moisture )
So they go "soggy" if exposed to the air

bread has not much sugar in its make up
so goes dry and hard
When exposed to air

Actually everything normalizes its moisture content. its just that you expect donuts to be soft, and crusty bread to be hard. Leave them out and the donuts get hard in the fridge, and the bread will get soft in the fridge.
Oil content has a lot to do with it too. Pastries with lots of oil or butter will get soft and stale bread gets hard since it has little or no oils.

Biscuits goes soft because of moisture... bread goes hard becuase of bacterial fungi growth

Dry foods absorb water from the air and damp ones dry out.

it is just to make you buy more stuff all ways buy your bread and stuff on Tuesdays as Mondays is frozen
