Who says you can't?!?!? I work in a resturant and we freeze it all the time! Just make sure your ingredience are cool before you blend them and then put it in a ziplock bag. never a bowl! It'll be fine for 12-18 months.

I freeze hummus in a tightly-covered plastic container all the time. I defrost it in the refrigerator, stir in a touch of olive oil and transfer to a serving dish - always perfect.

Homous (hummus) can be frozen but can tend to get a little watery when thawed.
Defrost in the refrigerator, and whisk before serving.
Put it in an ice cube tray to make single-sized servings.
Transfer the hummus cubes to another container for storage. They don't take long to defrost later.

it's an emulsion... a mixture of oil (from the garlic & the tahini) and water-soluble fiber (chickpeas = garbanzos). If you freeze it, the watery fibery stuff gets solid, and separates from the oils. ^..^
