Its because I love chinese beef in black bean sauce but i've tried to make it twice (using supermarket sauces) but I never seem to get the beef as juicy and soft as when we order it. How do you do it?

We ate at a Thai place in Florida, and my kids ordered a chicken dish that was skinny, almost curls of chicken that had been deep fried and had a sauce all over it. Any ideas of what this may have been?

I purchase all of my ingredients from a local Indian grocery, and I take no shortcuts. I'm a seasoned-cook and I know how to both follow recipes (to-the-letter) as well as to cook based upon taste, looks, etc.

Granted, I've only tried about nine different recipes from the internet, but the recipes were from popular recipe sites and all of the recipes were highly rated by many users. One would think that at least ONE of those recipes was "tweakable" into something tasty, but, alas, all of them were completely void of flavor or just completely wrong.

I originally thought to save money by learning to cook Chicken Curry myself, as I eat in in an authentic indian restaurant nearly everyday. But I'm saving no money as most of the food is so awful so as to not recommend itself to be eaten.

I can't very well ask the restaurant for the recipe!

Tips? REAL recipes?

A few years ago while in Europe my sister used to cook Vietnamese food, and it was absolutely delicious!!

The dishes are like Chinese food, you know, like vegetables with chicken and beef along with rice.....

BUT the flavor was very different, unique...

do you know why is that? I think it is because of the ingredients of dressings and juices you pour there, or the spices used, but Im not sure really...

NEVER had this happen before. Wrapped up leftover enchilada dish with a piece of aluminum foil and put it in the refrigerator. When we brought it out today to serve, the aluminum foil had actually disolved right into the entree' itself where it was touching the top! So crazy! What is this all about??

When I make dried black beans or black eyed peas, I fry the salt pork first, then add the grease and the chopped fatback to the beans.

Has anyone tried adding the chopped salt pork raw to the beans/peas while they are simmering? I know I won't get the crispy bacon-like texture, but I want to know if I can save a step.
