sesame chicken is my absolute favorite... you can order it with spices or without, depending on your taste buds that day... General Tso Chicken is also very good... same with the spices... Sweet and sour chicken is, well a sweet chicken served with lots of veggies... chicken/pork/BBQ chow mein is soft noodles with a few veggies mixed in... any chicken is really really good... but i reccomend that you at least try the sesame chicken!!! This list will be able to give you a variety of tastes in a good Chinese Restaurant:
Crab Meat and Corn Soup or if you're styling Sharks fin soup. Top of the line soup is "Buddha jumped over the fence" soup.
Ask for the Cold Cut Platter - which should give you charsiu pork, century egg, some jellyfish, pickled pigs feet, Crispy suckling pig and roast duck among other things. nothing fancy but will enable you to taste a lot of things
Only a few chinese restaurants serve this: Roast duck slices with fruits (cantaloupe, watermelon and honey dew melon) served with jellyfish. You will experience multiple sensations in this dish, not to mention multiple texture.
Seafood Fried Noodle or Black Bean Sliced Beef with Green Pepper Chow Fun. Both yummy and chewy.
Lobster with ginger onion - this is heaven, or youcan try it with a ginger garlic thick sauce over a bed of noodles --- heaven part 2. Black bean sauce with garlic is ok too.
Salt and Pepper Pork Chops or Tangy capital pork chops or Salt and Pepper Shrimp
Braised fish slices in velvety egg white sauce - yum yum. or Pipah tofu - tofu pieces in a ham broth sauce.
Abalone with Black Mushroom with oyster sauce - the king of chinese dishes.
Almond tofu with lychees for dessert

I'm assuming you have access to non-Americanized Chinese restaurants.
If you're in a northern style Chinese restaurant, I would recommend drunken chicken, cold chili cucumbers, cilantro beef rolls (cilantro and beef wrapped in a thin pancake). Try a "water cooked beef" which is a beef cooked in a fiery hot spicy water based sauce. Avery traditional northern Chinese noodle is a Zhajiang noodle. It's a savory soy based meat sauce tossed with shredded cucumber, sprouts, carrots, and of course noodles. In a good restaurant, the noodles will be hand made.
In souther style restaurants, such as Cantonese or Chiu Chow style - try a lemon duck soup, or a steamed winter melon soup (you might have to order this in advance of going tot he restauratn. they steam the soup inside a huge wintermelon), roasted goose, or chiu chow style marinated goose. Try a mushroom steamed chicken. depending on the flavor, chicken is steamed with wood ear, mushrooms, wolfberries, dates, on top of a lotus leaf. The flavor is quite delicate and the chicken is very soft and tender. Try a garlic fried crab. Crab is deep fried in mounds of crispy garlic bits... very savory.

Ummm. Cashew Chicken, Custard, Potstickers, Mongolian Fried Beef, idk if you've already had those though. Go to a dim sum restaurant where they bring all the food around on trays and then you get to try what looks good instead of what sounds good. I've done it before, it really opens your eyes. lol. I would do that if I were you. =)
