Pesto Chicken Florentine
2 tablespoons olive oil
2 cloves garlic, finely chopped
4 skinless, boneless chicken breast halves - cut into strips
2 cups fresh spinach leaves
1 (4.5 ounce) package dry Alfredo sauce mix
2 tablespoons pesto
1 (8 ounce) package dry penne pasta
1 tablespoon grated Romano cheese
Heat oil in a large skillet over medium high heat. Add garlic, saute for 1 minute; then add chicken and cook for 7 to 8 minutes on each side. When chicken is close to being cooked through (no longer pink inside), add spinach and saute all together for 3 to 4 minutes.
Meanwhile, prepare Alfredo sauce according to package directions. When finished, stir in 2 tablespoons pesto; set aside.
In a large pot of salted boiling water, cook pasta for 8 to 10 minutes or until al dente. Rinse under cold water and drain.
Add chicken/spinach mixture to pasta, then stir in pesto/Alfredo sauce. Mix well, top with cheese and serve.

Do a shake-n-bake with the chicken. Put some breadcrumbs, parmesan or romano cheese, salt and pepper, a little ceyanne pepper, and some crushed red pepper into a large sealable plastic bag. rinse off your chicken and place it in the bad also. Shake the bag to coat the chicken. Bake the chicken in the oven. While it is cooking, fry some hot Italian sausage. 2 links should be enough. Also, cook some pasta while the sausage and chicken are cooking. When the sausage is done cut it into slices or wedges or whatever, just as long as it is in bite-sized pieces. If you cooked the sausage in oil make sure that you save the oil. Drain the pasta and leave it in the collander. In the pan that you cooked the pasta in, pour the oil from the sausage and a little extra olive oil. Add the cut up sausage. cook this on a low setting for a few minutes just so that the spice from the sausage has a chance to infuse the oil. Add the pasta to the pot without turning off the heat. When the chicken is done, cut it into bite-sized pieces or strips and serve it on top of the pasta and sausage.

You know, when I am in a hurry I just pop a chicken breast in a bowl and squeeze a couple of lemons over it throw it in the refrigerator for a while.
Then i sprinkle a little salty on it and some lemon pepper and cook it in the over at about 350 for 20 min or so, until the juices run clear.
Then I boil some angel hair pasta (it only takes a few minutes), Saute some garlic and onion in a Little olive oil, add a diced Roma tomato and squeeze a lemon in the mix and toss it together with the pasta and grate a little Parmesan cheese on. Throw in a little bagged salad on the side and you have a quick, healthy and yummy meal!
You should look at the food networks web site. You can search for recipes by ingredient... or you could get a Rachel Ray cook book. She has the 20 minute meal market cornered!

INGREDIENTS
* 1/2 pound dry fettuccine pasta
* 1 cup fresh chopped broccoli

* 1/2 cup milk
* 1/2 cup grated Parmesan cheese
DIRECTIONS
1. Bring a large pot of salted water to a boil. Add fettuccini pasta and cook for 8 to 10 minutes or until al dente, adding broccoli for the last 4 minutes of cooking. Drain.
2. Cut chicken breast meat into bite size pieces, trimming any fat off in the process. In a large skillet melt butter or margarine over medium heat. Add chicken and saute until well browned. Add soup, milk and cheese and stir all together. Add pasta/broccoli mixture and heat through. Serve hot.

Any thick teriyaki sauce and chicken are great friends. You can let the breasts cook over medium heat in the sauce. Add some stir-fried carrot and onion, and serve over rice. You can garnish with pineapple chunks, kids tend to like that addition. If the breasts are decent-sized, use a knife to split the thicker parts of the breast so it lays flat and is even (or use a mallet) and then layer your favorite ham and swiss cheese. Roll the chicken up, pin it down with toothpicks, and roll it in an egg wash and then seasoned breadcrumbs. Put the rolled chicken in a glass dish and cook at about 350F until they are cooked through and browned. You can do chicken parmesian the same way, just use mozarella instead and serve topped with marinara. It doesn't take too long to prepare and cook, but it does make a mess.

Well one quick one would be. Cook a chicken breast, cut into bite size. Then make pasta whatever you like then when it's done put in a pan and put teh chicken with the pasta, Mix, then put shreded cheese on top put in micowavr till cheese melts and Voila instant chicken pasta and cheese. Yummy. Can also be done with any pasta.

You can buy some different kinds of sauces in jars at the store.
Staple ingredients for pasta... Garlic fresh or powder, basil, oregano, salt, olive oil, pesto, and some sugar.
I add some sugar to taste when I make any kind of red sauce because the sugar breaks down the acidity in the sauce. You can also use some crushed red pepper to your sauce to make it spicy. Also get some parm cheese and/or mozzarella.
You can grill the chicken, bake, or even fry. Have fun with it. The best way to find a recipe you will like is to experiment with your different ideas. Enjoy.

boil some penne pasta (for 10-12 mins). put into an oven dish. add some sliced roast chicken or tuna, add some pasta bake sauce or a bolegnaise sauce and stir through it. put some cheese and 1/2 cup of bread crumbs on top and bake for 15 mins. Delicious, good as left overs, and really quick and easy.

Really quick - boil up your favourite pasta. In a separate pan, warm through some campbell's condensed chicken soup. when warm and pasta cooked, stir together ! Delicious sprinkled with black pepper!

Chicken breast, red peppers, mushrooms and onions. Sautee off chicken and veg. Add enough contents of a tin of campbell's condensed cream of chicken and white wine soup to make a sauce, thinning with milk as necessary. Can be jazzed up with some thyme or tarragon for extra flavour.
Tuna, mushroom, broccoli pasta bake. 1 tin tuna, a few mushrooms and a few florets broccoli. Cook broccoli in water until tender. Combine with tuna and cooked mushrooms. Add campbell's condensed cream of mushroom soup. Combine with pasta (also works nicely with brown rice or white/wild rice combination). Sprinkle with cheese of choice (mozzarella, cheddar or red leicester work well) and grill until cheese bubbling and golden.
