I beg to differ. Authentic Chinese food that is good is salted only lightly. The taste of good chinese food is from the broth or sauce that is made for it. For example a good chicken soup with asparagus spears is made by slowly simmering chicken in a variety of spices. Soft braised pork slices are simmered in a mixture of soy sauce, star anise and cinammon bark. A good chow mein dish is topped with a broth that combines pork, chicken and necessary spices such as ginger and garlic. Occassionally msg might be used as has been used for hundreds of years, but can be omitted upon request.

MSG was discovered and patented in 1909 by Ajinomoto Corporation in Japan. So MSG wasn't been used for hunderd years + not just Chinese food contains, therefore, the differences between authentic Chinese food and Americanized Chinese food should be determined by the cooking methods & ingredients.

Authentic Chinese cooking requires fresh ingredients (preferablely not the frozen meat), we go to the market almost everyday to buy meat - like pork / chicken and fish (chicken / duck / fresh water fish are alive and transported from the farms).
We seldom deep friy food at home (home cooking) but stir-fry (sauteed), steam or braise the ingredients.

in most chinese food mainly the takeout food , they use alot of msg which is like twice as bad as salt, you will know if you are really thirsty when you get done eating but it makes it taste better. authentic chinese food is so much better, let me put it like this its like the difference between going to a fast food place and having a home cooked meal. you can taste the freshness and quality in the food, you just have to ask the chinese people they know if there are any authentic chinese places or not in town.

one of my best friends is Chinese and her family owns 5 Chinese restaurants, all very successful, and good as far as mainstream Chinese restaurant food goes... but the food they eat at home is soooo different from the one they serve in the restaurants. Its soo much better too. The restaurant food is totally Americanized, and much more fattening.

Yes very high in salt, probably due to the preservatives in the food prior to arrival at the location. It is less salty and not as greasy.

It may or may not contain high salt content. One thing sure it is high is monosodium glutamate (MSG). a flavor enhancer that also makes food taste less salty.

It all depends on what you buy, and where you buy it from.
Authentic chinese food includes things such as, frogs, crickets, monkey brains (yes you heard me, although its illegal to eat them now), trantulas, +just about any other thing you can imagine.
