I would expect to find cuisines of the Pacific countries which are wide ranging. It blends flavors of the Pacific islands and the Orient with a touch of California and spices.
You'll find noodles, potstickers, seafood tacos and chimichangas. Everything from sushi to steak with great sauces - mixtures of wasabi, ginger, pineapple, curry, soy, chili glaze and hoisin - to Pad Thai, a mixture of rice noodles, shrimp, chicken, sprouts, spices and peanuts, as well as green curry and coconut-milk dish. Spring rolls too.
I would define it as "Hawaii and Asian influences".
Actually Pacific Rim cuisine have no specialty dishes because the region and cultural influences are very wide. Great dining idea for those who want variety and choices.

"Pacific Rim" is the restaurant cliche' for Asian fusion food. I think the term was invented in Australia.
If you've ever heard of "California cuisine", this might give you a good idea. Basically, they combine native ingredients with European cooking methods in a kind of "fusion".

Pacific Rim Fishing Charters organise fishing trips to catch salmon or halibut.
