Spinach and Ricotta Pizza Dough
1 cup fresh spinach, lightly steams
1 cup ricotta cheese
1 egg
4 1/2 cups flour
1 teaspoon salt
4 tablespoons olive oil
2 packages dry yeast
2 teaspoons light brown sugar
3/4 cup warm water

Dissolve the yeast in the warm water and stir in the light brown sugar. Set the yeast mixture aside for at least 5 minutes. Meanwhile, put the ricotta cheese and the spinach leaves in a blender and blend at high speed until you have a smooth, bright green mixture.

Sift the flour into a bowl with the salt. Make a depression in the center of the flour and add 3 tablespoons of the oil, the egg, the spinach mixture and the yeast mixture. Put flour on the kneading board and place the dough mixture on the flour. Knead the mixture for 8 to 10 minutes until the dough is uniformly mixed and elastic.

Add flour as you knead if necessary to keep the dough from becoming too sticky. When the dough is ready, place it in a clean bowl that has been brushed with oil. Brush the top of the dough with oil and place a clean cloth over the bowl. Put the bowl in a warm, draft-free place for 1 1/2 hours.
This recipe will make: 2 thin crust pizzas, 12" each; 2 stuffed pizza pockets; 1 thick crust pizza, 14"; 6 - 6" pizzas

I'm curious about something. Why is it that there seems to be more overweight people these days when there are so many people turning to whole grains and health food? For years people ate white potatoes, white bread, white rice, etc and were not overweight. Is it really the food or is it something else that's making this country have such a weight problem? Food manufacturers are making everything "healthy" using whole grains but yet people still battle with weight problems. Does it really matter if we eat whole grains or not? Or is it the lack of exercise or something else that's really the problem? All I know is that these "healthy" foods that are supposedly unprocessed which to me means less processing, are really expensive. Shouldn't less processing be less expensive? Is the food industry just trying to make money off of people trying to be healthy?

I dont get it! My mother-in-law and her relatives drink at least one cup of coffee EVERY NIGHT before they go to sleep. Sometimes, she'll drink one like 30min. before she goes to sleep. Why would anyone do this? Is it that she drinks so much of it her body doesnt feel the affect from caffeine anymore? I know when I serve myself a cup-a-joe I usually dont finish it and feel a head change almost immediately.
Do you do this? why?!
