My Father used to cook corned beef brisket and cabbage. He would put the brisket (with spices) in a pot of water, bring it to a boil and then turn it down, cover it and let it simmer all day long. They always turned out wonderful, tasty, and fall apart tender.

Mmmm mmmm good. I think I better go buy one and cook it up sometime this week. Thank you for the good memories this question brought to mind.
