The Production of Sugar

Growing the Cane- Sugar cane is first grown
which takes an average of 12-24 months.

Harvesting- Sugar cane is harvested by chopping the stem and leaving the roots so it could grow back next year.

Extraction-The cane is the put in a roller mill which
extracts the juice from the sugar cane.

Evaporation-At this stage in the process the juice is very dirty so it gets sent to the boilers where the juice and dirt gets separated. Next the juice is thickened by boiling the juice which removes all the water.

Boiling- the syrup is then placed inanolther large boiler to remove an water for the sugar crystals can grow. Once the crystals have grown the resulting mixture of crystals and the mother liquor is spun in centrufuges to separate the two. Then final the crystal are sreid before being stored.

Storage- Large pills of sugar is then stored in the proper storage area. Then later packaged and shipped to grocery stores.

I've never been taught, and my math teacher is totally useless. I can determine the horizontal and vertical translations and if there's a reflection on the x-axis, but I can't figure out a way to determine the vertical stretch of a parabola.

Example:
A parabola with a vertex of (-1,-4) intercepts the x-axis at (-3,0) and (1,0).
Using this function:
f(x) = RxVS(x-HT)^2+VT
I need to come up with the equation of the graph. So far I have this:
f(x) = VS(x+1)-4

How would I get the vertical stretch?
