The Production of Sugar

Growing the Cane- Sugar cane is first grown
which takes an average of 12-24 months.

Harvesting- Sugar cane is harvested by chopping the stem and leaving the roots so it could grow back next year.

Extraction-The cane is the put in a roller mill which
extracts the juice from the sugar cane.

Evaporation-At this stage in the process the juice is very dirty so it gets sent to the boilers where the juice and dirt gets separated. Next the juice is thickened by boiling the juice which removes all the water.

Boiling- the syrup is then placed inanolther large boiler to remove an water for the sugar crystals can grow. Once the crystals have grown the resulting mixture of crystals and the mother liquor is spun in centrufuges to separate the two. Then final the crystal are sreid before being stored.

Storage- Large pills of sugar is then stored in the proper storage area. Then later packaged and shipped to grocery stores.

The formation of the sugar from photosynthesis in the plant can be roughly summarized as (many many steps left out):

12 CO2 + 11 H2O ---> C12H22O11 + 12 O2

Fortunately for us, there is some oxygen produced as a byproduct.

The recovery of the sugar is pretty much a physical change: the sugar is already in the sugar cane when harvested, all you are doing is separating it form the other materials. When the sugar (or most other solids for that matter) crystalizes, the majority of the impurities are driven out of the forming crystals and remain behind in the residual liquid.

All of these are physical changes, except the "Growing the Cane," in which carbon is fixed by photosynthesis.
