Chefs on the cooking shows always recommend using stainless steel pans for cooking nearly everything except fish and eggs, in order to get that "fond". But I find that, unlike on TV, everything I cook in the stainless steel pans stick so much that it destroys the surface integrity of the food when I have to scrape them off the pan.

HELP!! What am I doing wrong???

There is a certain kind of candy that I had a long time ago and it was sold around Valentines day. They were called love hearts. They aren't the ones that are like smarties, although they do come in a package that looks somewhat similar to them...just longer. They have sort of a fizzy taste to them.

Notes: I use an extra fine grind. I boil the water first, then add the coffee (and sometimes sugar).

So the choices I have are:

Strain it immediately (like the Brazilians do)?

Or continue to boil the coffee 'till it bubbles (kind of like the Turkish method) before serving?

Thanks. First hand anecdotes are appreciated.

I am embarrased to admit, that I am 57 and never steamed vegetables, eventhough I've heard they are good. Most of the time I am only cooking for my Dad and me.

Whenever I boil them they get way too soft. If I boil them less, they're still raw. What's the best way to boil potatoes and to know that they're done just right?

Why is it your favorite cake? What's your least favorite? My favorite kind of cake would be hard to choose, but if I had to say, I'd go with either white confetti cake or white or yellow cake with strawberry filling in the middle. My least favorite cake is carrot cake---but for some reason a lot of peole like carrot cake. I bet the least favorite of most people will be angel food cake.

I just bought one and am wondering if it is really worth the cost (I got mine for $400)? Is there such a thing as "over mixing" with it? Can I just throw all ingredients in the bowl and "mix" or do I have to follow the recipe and mix things seperately?

Thanks for your advise!

I remember back in the 80's, if you shake a soda can just a little, you and your friends will be showered in Coca Cola. Now the vending machines drop the can really hard and nothing happens when you open it... Why...?

I have an amazing cheesecake recipe that puzzles me. It says to get the mixture in the springform pan, then place that pan in a deep baking dish with an inch of water in it before placing it all to bake in the oven. My springform pan is not watertight... Is it just because it is a cheapo, or are all springform pans not watertight??!?? Please help!!
