Potato Candy

1/2 cup mashed potatoes
powered sugar
peanut butter

Combine 1/2 cup mashed potatoes and power sugar till is firm enough to roll. The mixture will become very wet; just keep adding powdered sugar. roll out on powdered sugar like noodles. Cover with peanut butter. Roll into jelly roll cut into small pieces. Very rich!

4 cups confectioners' sugar
4 cups flaked coconut
3/4 cup cold, plain potatoes, mashed (do not use leftover mashed potatoes made with milk or butter)
1-1/2 tsp. vanilla extract
1/2 tsp salt
1 pound dark candy wafers (usually sold in bulk foods section in small bags, or as bulk. If not, Jo-Ann stores sell it)
1 cup semisweet chocolate chips

In a large bowl, combine the first five ingredients.

Line a 8 or 9-inch square pan with parchment paper - lightly spray parchment with non-stick spray. Spread coconut mixture into pan. Cover and chill 8 hours or over night - till firm.

Cut into small pieces. Cover and freeze.

In a microwave , melt candy wafers and chocolate chips. Dip pieces in melted coating and chocolate chips; place on parchment paper to harden. Store in an airtight container.
