When in Okinawa, Japan I ate a lot of fried rice......I have yet to find any that tastes quite like it. I have put some oyster sauce and it is similar, but not quite. Anyone know what I should put in my rice to make it authentic??

I would like to know what ethnic means. I ask this because i have never heard English food, or food from France or America referred to as 'ethnic food'. Could a hotdog or hamburger be considered ethnic food? Why aren't traditional American and certain European cuisines referred to as ethnic food?

I make an awesome coconut shrimp. I mean, sell-your-soul delicious. Unfortunaely, the deep fry isn't so good on the 30+ y/o hips. Does anyone have an idea/recipe to make them as good (or at least, nearly) without the deep fry? (I'll gladly give my recipe in exchange...but won't be responisble for poundage gained!)
