I make an awesome coconut shrimp. I mean, sell-your-soul delicious. Unfortunaely, the deep fry isn't so good on the 30+ y/o hips. Does anyone have an idea/recipe to make them as good (or at least, nearly) without the deep fry? (I'll gladly give my recipe in exchange...but won't be responisble for poundage gained!)

I will post my "recipe" when I choose the best answer. I use the term "recipe" loosely as I am one of those cooks who goes by a "little taste" rather than an exact measurement. But trust me...it is oh-so-yummy....

A lot of oven baking ideas. Will it make the batter crispy?? I've often pondered this but am always to chicken to experiment with shrimp/prawns as they're expensive where I live.

My recipe (simple, but oh-so-good):
1/2 pound medium size shrimp
3/4 cup pancake mix
3/4 cup beer
vegetable oil for frying
1/4 cup flour
1 cup sweetened flaked coconut
Peel & devein shrimp, leaving tails intact. Combine pancake mix and beer in a small bowl; stir till smooth
pour oil to depth of 2 inches in dutch oven or deep fat fryer; heat to 350.
dredge shrimp (butterflied) in flour, shake off excess. Dip shrimp into batter and then dredge in coconut.
Fry, a few at a time, for 45 leconds on each side or till golden. Drain on a paper towel.
This is for about 4 appetizer servings. I usually quadruple the amount for serving 6 to 8 adults as a main dish. Serve with mango salsa on the side.

Make your shrimp as per usual but do not freeze them. Spray a baking sheet and lay the shrimp out in a single layer.

Try using pancake batter. Prepare the shrimp like you usually do with coconut. Then broil them. You don't need oil and the shrimp will come out crispy. Not too close to the flame.

take away the frying and just saute' ginger (pinch only)garlic,onions and tomato put in the shrimp, season with salt & pepper, pour a bit of tomato sauce and finally the coconut milk then simmer for a few minutes to cook
do not overcook shrimps so natural taste, texture and color will still be there
you may have the options to add some veggies like carrots and potatoes, that will be a healthy complete viand

You could try baking until just about done and then broiling them for just a few minutes so they get a good crunch! Let us know how you did it!
