Depends on how long you want to preserve them. Whole potatoes don't freeze well. Shredded hash browns and French fries, on the other hand preserve very well up to 3 - 4 weeks.
If you just want to keep them fresh for a day or three, peel them, rinse them and them soak them in fresh water with a little lemon juice to prevent oxidation (turning brown). Soak them for about 15 - 30 minutes, then drain and put them into enough fresh water to cover completely. Store in an uncovered container in fridge. Change the water every couple of days.
I've actually kept fresh, whole potatoes this way for 6 or 7 days. But they tend to get a little mushy after that.

Raw peeled irish potatoes will keep for a day or two in the refrigerator or cooler after being peeled and/or sliced if you cover them with water. The water keeps the potatoes from turning or oxidizing. Change the water a couple of times. At my restaurant, this is how we were able to keep ahead of our potato requests when we didn't have time to prepare potatoes for just one meal during rush hour. Potatoes get mushy if you freeze them(even blanching them first), since potatoes are a high water content veggie.

You can' freeze them without processing in hot water first. The hot water stops the ripening process so they won't rot when you freeze them. If you intend to use the ram peeled potatoes with a couple of days you put them a glass bowl with water to cover and a little salt and cover the dish and put them in the refrig. Frozen potasoes when thawed will proba ly only be suitable for soup or mashed potatoes.

I think if you keep them in a pot of water in the fridge they last a few days. The air is what makes them turn brown, so as long as they're submerged they should be fine!
