Ok, Here you go! ***
1/2 cup cornstarch
1/4 cup water
1 1/2 teaspoons fresh garlic, minced
1 1/2 teaspoons fresh ginger, minced
3/4 cup sugar
1/2 cup soy sauce
1/4 cup white vinegar
1/4 cup sherry wine or white wine
14 1/2 ounces chicken broth (a can)
Place sauce ingredients in a quart jar with a lid and shake to mix. Refrigerate until needed shaking it again when you are ready to use it. At least 2 hrs.
Shake sauce mixture, and then add to pan with onions and peppers, and Cooked chicken, cook until thick. If it gets too thick, add a little water. Serve over rice.

If you can find a sauce from Lee Kum Kee called Chili Garlic sauce and if you have a oriental market or shopping district in your town they stock alot of the right ingredients. Some high end grocery store may to, it all depends on the city you live in.
If not dried chilis are good, lots of garlic, plenty of ginger, nuts if you like, marinate your chicken with the spicy stuff to have it soak in, if you have a Chinese restaurant in town that serves it, try it and see if there is a level of heat to it and take it from there. Another added flavour for spicy chicken is orange, both juice and peel.

chinese red peppers, duck sauce and fried chicken in a wok, not fried but cooked in a lttle oil in wok with red bell, a little ginger, and let them blend. small amount of finly chopped oinion, and garlic and they good to go, with fried rice.
