I've been wondering...

If sweet is the opposite of sour and vice versa, how is sweet and sour sauce possible. Wouldn't the two flavours neutralise each other to form a neutral sauce with a plain flavour like water?

I can prove that sweet is the opposite of sour and vice versa by talking about fruits - if the fruit isn't sweet, it has to be sour and vice vera. Therefore, sweet is definitely the opposite of sour and vice versa.

Can you prove me wrong by giving me some sorta scientific explanation or something? If not, just tell me whether you agree with my theory or not.

I hope I'm making sense here...

Take a simple cookie recipe Ingredients
1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons baking soda

Can someone tell me what each ingredients do in the recipe.
I know flour is the base. Peanut butter is for the flavor.
But what about the eggs or why two kinds of sugar. Or baking soda and baking powder
