it's an abreviation for "vegetarian/vegan" as both words have "veg" and "n" in common whilst one has "etaria" inbetween and the other merely has an "a"

so typing Veg*ns is simply a short hand way of addressing both vegans and vegetarians...

I use veg*an, but either is considered an abbreviation for "vegetarian or vegan."

The * is a "wild" character that, in this case, can sub for either the "a" in vegan OR the "eterai" in vegetarian. So... it's a shorthand for when you're referring to both vegans and vegetarians, but don't want to type out "vegans and vegetarians."

I guess it's for the same reason the Jews sometimes put a - where the "o" should be in God's name (G-d). I guess vegans are just divine!:)
