i only have a 1/4 pound left over. What can i make with it other than meat sauce. a side dish is also fine.

i mean something that i can make that will feed 4 people. i cant make burgers for 4 with a 1/4 of meat lol

Just make something you would usually make with ground beef (other than meat loaf I mean). All you have to do is put in lots of all the other stuff that is in it to hide the fact there isn't much meat. I do this all the time if I am short of meat. And trust me if it is good no one notices the lack of meat. Or maybe they are just too polite to say anything. Either way it works!!

I don't know how many people you are planning on serving with that 1/4 pound of meat but if you want to stretch it, as in making a meatloaf or Sloppy Joe, use bulgar as a stretcher. For the Sloppy Joe, take the bulgar, cover in water to about 1/2 inch above the line of bulgar. Zap in the microwave until the water starts to boil and remove. Let sit for 15 minutes. Then cook the hamburger, breaking it up into tiny pieces (they will be the same size as the bulgar). Once the meat is no longer pink, drain the bulgar and add to the meat in the pan. Add your Sloppy Joe seasonings - either home-made or from a package. That will double your meat. When my husband was on a low-fat/low-cholesterol diet and could only have 4-6 oz of meat a day, I would fix that for him, using bulgar.

Hamburger happy faces and hamburger potato casserole are the two I can think of immediately. Just cut the recipe down if you don't need to feed lots of people :) The report is available from www.all-about-meat.com

Fry it up and sprinkle it on pizza, make soup, an almost vegetarian chili, or shepherds pie. If you want to feed four, make up the difference in protein with eggs, cheese, other leftover meat, beans, or dairy.

Stuffed shells or pasta with shredded cheese, egg, cottage cheese, chopped spinach, a handful of breadcrumbs, and the beef are delicious!

Who needs a recipe? Be Creative!

Chop up the hamburger while your cooking it, add onions and some steak seasoning. A little salt and pepper to taste. Eat it on buns or plain old bread if your po' like me as a loose meat sand which with lettuce and tomato..and other sandwhich accoutrement's...

Ingredients and Directions
1/4 lb Ground beef

1 tb Flour

8 oz Milk

Salt and pepper to taste 4 x Slices of toast

Brown ground beef in skillet. Remove all but 2 - 3 tables of fat. Move meat to the side and mix in flour until smooth and brown. Add milk, salt and pepper. Bring to a boil and stir until it reaches the thickness you prefer. Serve over hot buttered toast.

Tacos or possibly spaghetti, but if you're trying to feed four people off 1/4 lb. of meat that's going to be kind of difficult.

You could brown it with some onions, peppers, and spices, cut up some tomatoe and put it in a tortilla with some cheese and sauce. If you use alot of vegies this could make several tortillas.

Beef nachos... brown the meat, add taco flavoring, onions, green peppers. Pour over chips and add salsa, sour cream and nachos are ready!!
