Okay here's the deal:
pollo-vegetarian is someone who eats poultry, such as chicken, turkey, and duck. note: all white meat, however no red meat, fish or seafood. pollo is spanish and it means chicken:)
now a Pescatarian is someone who abstains from eating flesh except fish.
hm, i'm wondering if this word is related to the spanish word pescado for fish. notice the pesca in each word.
anyway, combine pollo and pescatarian and you have a type of "vegetarian" who eats white meat and fish, but no red meat.
