i cook it in a Hungarian fashion.
its shredded and sauteed with some onion and garlic, salt and pepper.
then its thickened with a roux
and sour cream, a little vinegar and dill are added as well as paprika.
its my favorite way to eat zucchini

Try this. Cut Zucchini into bite size peices. Coat Zucchini with some egg wash, then roll in Italian flavored breadcrumbs. Bake at 350 for 25 minutes,

Just plain zucchini
Wash and slice the zucchini. Put 3cups of water in the bottom of a steamer. Put the zucchini slices in top of steamer. Don't forget the lid. Bring water to a boil. Turn of heat. I live at a high altitude so it take about 14 minutes for the zucchini to become tender.
Serve with a little seasoned pepper.
If you do not have a steamer. Put the zucchini directly into some water in a sauce pan with a lid. Bring to a boil put lid on pot. Turn off heat.... serve when tender.

My family enjoys it when I slice it in half lengthwise, pour a little olive oil into a plate, let the zucchini soak up the oil for about 30 minutes or so, then grill. I place the zucchini around the outside of the grates so it doesn' t burn up, then after it cooks on both sides until tender, I sprinkle with salt and pepper. Another way I cook it is to soak it in olive oil for a while, then sautee over low heat in skillet -- same principle as the grill, then sprinkle with salt and pepper.
My mother in law likes to slice it into rings, dip in egg and milk, then dip in corn meal, and fry in vegetable oil. It's very good this way, too.
One more suggestion is to not cook it at all, but cut into strips and dip in blue cheese or ranch salad dressing. You could also slice into bite size pieces and put in a loaded salad ... yum!

Quarter it, marinate in Italian salad dressing for 20 minutes, and grill till you see grill marks. Or slice 2 med. zucchinis aprox. 1/4" thick and saute with 3 cloves of crushed garlic, 1/3 cup olive oil, 1large vidalia onion sliced and 1 and 1/2 cups of crushed plum tomatoes. Cook over low to medium heat for roughly 15 minutes or until zucchini starts to turn tender(not mushy). Salt and pepper to taste.

There are several ways to cook zucchini, one is to hash it up with some diced onion in a fry pan with butter until golden brown, the other way if the zucchini is big around enough is to cut it up into dollar size and dip in egg and then flour and fry it until dark brown, either way I like them both.

One of the women from church brought the best brownies I had ever had ( and I have had plenty ). I could tell by the texture and taste that they had to be homemade. Well, I was wrong. She took a brownie mix, she said any would do, but that she had used the one with the prepared frosting included. She prepared as directed, adding 2 cups shredded zucchini to the mix. You really have to try this. It's worth it!!!

Zucchini is one of those vegetables with a bland flavor. The upside is it is good eaten raw, and when cooked with other flavorful things, onions, garlic or a variety of seasonings, it taste different with each variation.

The easiest way would be to saute it in either some butter or a bit of olive oil over medium heat under tender but not limp. Add whatever spices you think might be good. Fresh or dried basil or tarragon is nice.
