The expiration date is in 2 months, and my bread doesn't seem to be rising as much as it ought to. The yeast is the instant type that's added directly to the flour. Could I increase the amount of yeast (very slightly) in the recipe, or could I try mixing it with lukewarm water & sugar before adding it to the dough?
