The expiration date is in 2 months, and my bread doesn't seem to be rising as much as it ought to. The yeast is the instant type that's added directly to the flour. Could I increase the amount of yeast (very slightly) in the recipe, or could I try mixing it with lukewarm water & sugar before adding it to the dough?

Just FYI, I've also been storing my yeast in the fridge.

Sorry, but adding more won't help. Instead you need to throw it away and buy new.

mix it with lukewarm water and sugar, if the recipe calls for sugar use part of it. It could be that your yeast got hot. Maybe the liquids you are adding to it is not warm enough or to hot. I have yeast that has expired 6 months and still use it. it depends on how it is handled

Try adding it to lukewarm water and sugar and let it sit for about 15 minutes to start the process then add it to your dough mix. If it doesn't start then yeast is probably no good and you should buy fresh.

Try mixing it first, with the sugar and warm water. If it rises as it should, you can use what you have mixed. If it doesn't proof, then get some fresh. And store yeast in the fridge, it will stay fresh longer than the date.

several factors can slow down yeast activity, proper dough tempreture and maintaining this tempreture during fermantion are two of the most important factors. If there is two months left on your yeast it should be all right if it was stored properly, adding a little more yeast will help.

Double the amount, or check if its still good by placing 1 tsp in 1/2 cup of warm water and 1 tsp sugar. if the mixture bubbles over the cup, its fine, If it doesn't, its going stale. Next time, refrigerate or freeze the yeast. It extends the life.

I would just double a couple of your recipes so you don't end up wasting it. I wouldn't add more to your recipe though if you aren't doubling the recipe because it won't turn out right.
