RITZ BRUSCHETTA
1 cup chopped plum tomatoes
1/2 cup KRAFT Shredded Mozzarella Cheese
1/4 cup chopped green onions
1 Tbsp. KRAFT Zesty Italian Dressing
2 Tbsp. DI GIORNO Shredded Parmesan Cheese
36 RITZ Crackers
PREHEAT oven to 400°F. Mix tomatoes, cheese, onions and dressing.
SPOON 2 tsp. of the tomato mixture onto each cracker; sprinkle with cheese. Place on baking sheet.
BAKE 8 to 10 min. or until cheese is melted. Serve warm.

ITALIAN NACHOS
4 pita bread rounds
1/2 cup marinara sauce
1/4 cup grated Parmesan cheese
1 (3.25 ounce) can sliced black olives
1/4 cup shredded mozzarella cheese
1 clove garlic, minced
DIRECTIONS:
Preheat the oven to 350 degrees F
Use scissors or kitchen shears to cut the pita breads in half, then into triangles. Peel apart the bread halves to make as many triangles as possible. Spread the triangles out on a large baking sheet, and sprinkle with Parmesan cheese.
Toast triangles for 10 to 15 minutes in the preheated oven, until lightly browned and crispy. While toasting, combine the marinara sauce and garlic in a small saucepan. Cook over medium heat until hot.
Transfer pita chips to a serving platter, sprinkle with olives, and pour sauce over them. Quickly cover with shredded mozzarella cheese, and whole basil leaves. Serve immediately.

TORTILLA ROLL UPS
1 Pkg of Flour tortillas
1 8 oz of creme cheese
1 tbsp chili powder
1/3 cup med. salsa
Soften creme cheese and combine w/ chili powder and salsa , I use a hand mixer. Spread the mixture in a thin layer on the tortillas, and roll up tightly.Refrigerate until set. (about 30 min)Cut into slices about a 1/2 inch thick and place on a platter w/ a small bowl of salsa in the middle, and roll ups all around the bowl. Could add thin sliced lunch meat also if wanted to the top of the creme cheese mixture.

Here is one a friend of mine makes. It is ALWAYS the big hit, and we always sit and wait for them to show up with this stuff.
Spicy Cheeseburger Dip
1. Brown 1 lb ground beef, drain, and cool
2. Put ground beef, 1 pack of Velveeta cheese, and 1 jar hot salsa in crock pot.
3. Cook on low until cheese is melted, stir, and serve with corn chips (the scoopable ones are best)
This recipe makes enough to serve at least 15-20 people.

Eggplant dip - buy a can of roasted eggplant(you can find it in any meditarean food store) ,add couple cloves mashed garlic, little bit olive oil and lemon juice, stirit upand serve as a dip .
make a cheese platter with any kind of cheese and serve with assorted crackers.
Nachos- spread cheddar cheese, chopped green onion,olives, chopped tomatoes, jalapeno over the nachos.. Putitin the oven for about 15 minutes.

There are some really good receipes already here, but I always find that with my family and friends, a big wedge of Brie or the like or perhaps Alouette, or Boursin is always a big hit with some water biscuits ( Carr's are excellent) and not too pricey.
Also crudite (raw veg like carrots, celery, cherry tomatoes) and dip is always a safe and relatively inexpensive option.
Failing that, BBQ wings..everyone loves them and usually you can get large bags at Super Walmart and Target. Sometimes they already come sauced, but if in doubt...Sweet Baby Ray's BBQ sauce is heaven on them!

Pepperoni Dip
1 pkg sliced pepperoni
1 can cream of mushroom soup
1 block cream cheese
Cut pepperoni slices into fourths. Combine all ingredients and microwave for 3-5 minutes, stirring occasionally. Serve with crackers or put in round bread bowl.
Mexican Dip
1 block cream cheese
1 can chili without beans
shredded cheese
Spread cream cheese in bottom of microwave safe dish. Pour chili over. Top with shredded cheese. Microwave until cheese is melted.

A great bean dip and so easy...
1 Can Hormel Chili w/Beans and
1 brick cream cheese
Double for bigger parties.
Just pour chili in small crockpot or pan on stove, cut cream cheese in cubes. stir until melted and serve with tortilla chips.
Buy different cheeses and do a cheese and cracker plate
Make a veggie tray with dips
salsa & chips
Crab Dip:
Immitation crab meat and cream cheese
I buy the sotfened cream cheese in tubs and for 2 tubs of cheese I use I package of crab meat.(Louis Rich)
Mix well, add a little chives and serve with assorted crackers.

Stuffed creamcheese jalepenos wrapped with bacon:
1. cut in half fresh jalepenos and clean out seeds and pulp
2. spread creamcheese inside
3. wrap a half strip of bacon around jalepeno
Set and bake on a cookie sheet with slightly deep sides to trap grease.
Next set in oven at 375 degrees for about 1 hr. keep your eye on them ovens vary.
Done when bacon looks well cooked and fryed and jalepenos are soft.
ENJOY THERE VERY SPICY!
