Using evaporated milk in things like mac and cheese will make it creamier, and the general rule is use the same amount. Evaporated milk is just milk with half the water removed. so maybe use half evaporated milk and half regular for a balance.

This is my families recipe: Elbow macaroni, as much as you need to fill the pan you're using Extra sharp cheese butter milk Boil the macaroni put half in bottom of pan, layer with chunks of cheese and butter, add more macaroni on top, more cheese and butter. Finally pour milk in the pan until about 3/4 the way full. Cover with foil, and bake at 350 for about 45mins-1 hour. Some people don't like this recipe, but it's worth a shot, hope that helps a little!

When I use evaporated milk I use 1/2 evaporated milk and 1/2 water; I think using all evaporated milk makes it too gummy.

Half and Half is even better. But yes you can use evaporated milk. Just keep adding and stirring till it gets to the thickness you like.

I think you would use the same amounts. My mum used to make it that way and it was nice but I don't know for sure if it is the same amounts as regular milk. Sorry. It does taste good though!
