Grilled, with a little Greek seasoning and with asparagus, also grilled, and a baby greens salad with feta cheese and walnuts! Yummy!

I am actually making salmon right now. I broil it with margarine(I can't believe it's not butter) and season with garlic salt, regular all purpose seasoning, and very little pepper. Others in my household like thier foods rather bland, so I didn't put too much seasoning. And when I cut the piece off for myself, I always add Adobo Badia seaoning(con pimienta with pepper). I HIGHLY recommend. Just try it at least once and you will know(My bast advice for salmon). And you will not be wasting your money because this season is used on many products. From beef to chicken and vegetables. My side dish is going to be broccoli and/or fried rice. And I nice cup of ice water. Poland Spring. I might sprinkle some hot sauce on the fish, but I doubt it.

Salmon Fillets over Couscous
Ingredients
Olive oil
4 (4-ounce) pieces salmon
Lime
House Seasoning, recipe follows
Butter
Couscous, recipe follows
Instructions
Preheat the oven to 350 degrees F.
Add a drizzle of olive oil to glass pan and place the salmon. Squeeze the juice of 1 lime over the top of the salmon and
sprinkle with the House Seasoning. Top with pads of butter. Wrap in the foil and bake for 25 to 30 minutes. Serve on a
bed of couscous.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Combine all ingredients in a bowl.
Couscous:
2 1/4 cups water or chicken stock
1/2 teaspoon salt
2 teaspoons butter
10 ounces couscous
1 cup diced tomatoes
1 cup crumbled feta cheese
1/2 cup green onions
Combine water or chicken stock, salt and butter in a saucepan, over medium heat and bring to a boil. Stir in couscous.
Add diced tomatoes, crumbled feta, and green onions. Remove from heat, cover and let stand for 5 minutes.
Uncover, fluff with a fork, and serve hot or cold.

I like to broil salmon fillets with a glaze of brown sugar and mustard. Or just sprinkle with your favorite spices such as dill or oregano and a tiny pat of butter. Broiling tends to dry it out less but if your fillets are thick you might need to bake a little first.
Some simple side dishes are a brown rice fillet or simple pasta with a garlic butter sauce. Keep the veggies easy to and try something like broccili or julienned carrots and zucchini.

Salmon can be sauteed, grilled or baked. Sauteed is a good choice for simplicity and flavor retention. Depending on thickness saute in olive oil or butter or a 50/50 combo add herbs after turning(turn only once). A nice side is wild rice or a wild rice combo accentuated with your personal preferences of seasonings and herbs( Fresh ground pepper works wonders, keep in mind that fresh ground pepper has a much more unique flavor than packaged ground pepper)

BAKED SALMON FILLETS OR STEAKS
Salmon fillets, any portion size, boned and skinned
Onion powder, to taste be generous
Garlic powder, to taste be generous
Dried dill, to taste be generous
Mrs. Dash, to taste be generous
Mayonnaise
Paprika
Wash and dry fillets. Spread thin coat of mayonnaise over salmon. Spray Pam or similar product over Pyrex or tin foil pan or rectangular pan (depending on amount and size of portions).
Sprinkle seasonings over fish ending with paprika. Bake in 375 degree oven for 10 to 20 minutes or until fish flakes easily.
Note: This recipe is wonderful used for boned and skinned chicken.
GREEN BEAN SALAD
2 lbs. fresh green beans, trimed.
1/2 cup oil
4 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon pepper
1 cup sweet white onions, thinly sliced
1/4 cup sliced stuffed green olives
Cook the green beans in a large pot of boiling water until tender. Drain well. In a large bowl, combine the oil, lemon juice, salt, and pepper; stir well.
Add the sweet onions, green olives, and hot beans and toss until coated. Serve immediately.

Marinate and BBQ. Put them in a ziplock with some Olive oil, soy sauce or tariyaki sauce, any spices you like. Marinate for an hour or two and throw them on a grill for a few minutes on each side. Great with asparagus and brown rice.

I put a pat of margerine, a packet of dried Italian dressing mix, and wrap it up in a piece of tin foil. Then I put it on the grill. I usually serve salad and either rice or one of those pasta mixes with it.

If you want to try something different get a stove to smoker and smoke them with alder wood chips. It ROCKS! Takes 25 minutes and the flavor is staggering.
