I like to slice in thirds if tight buds or sliced 1/2" thick if using portabella, shitake or chanterelles.
Do not wash under water. Use a pastry paint brush or old toothbrush to scrape dirt from the caps. The Mushrooms in the water tend to steam when cooking rather than sautee and brown.

Combine 1 Tbls butter with 1 Tbls olive oil and sautee in fry pan over medium heat with thyme, rosemary and 1 whole garlic clove crushed (remove after cooking) Add 2 Tbls marsala wine and minced parsley and serve.
Also great in scrambled eggs with shallot.

The best way ever is to melt some salted butter in a saucepan, wipe the mushrooms with kitchen roll ( do not wash ), add to the hot butter season well with freshly ground sea salt and black pepper, cook on a medium heat for several minutes, if the butter seems to dry up just add a little boiling water, it is the quickest, and easiest method with the best result.

This is easy and very yummy...
Either use portabellas, which are thicker w/a stronger taste (i prefer) or button mushrooms.
Cut mushrooms length wise.
Coat pan w/layer olive oil
Add mushrooms, chopped garlic.
Sautee until mushrooms often and brown.
Toward end of cooking, squeeze fresh lemon juice over them and if you like, add halved grape tomatoes, chopped scallions, and chopped parsley. Remove, eat as is or over couscous or rice.
This recipe has a ton of flavor and is VERY good for you! Enjoy.

Pan sautee in butter and a little salt and pepper. Medium to high heat and finish(last minute) with a good splash of wine(your choice) at high heat. The alcohol may flash over and that's ok because the alcohol burns off and only the rich flavor is left-behind

I slice mushrooms up with onion and saute in a little olive oil. Then I sprinkle it with Italian seasoning and seasoned salt and I add brandy and saute until the mushrooms and onions are tender. the alcohol burns off within a few minutes, so no one is going to get rocked on them! hehe! They're absolutely delicious this way!!! *OMG*

Clean and slice mushrooms. Melt butter in a frying pan - after butter melts add chopped garlic - lightly fry garlic for a few seconds and add several drops of soy sauce. Add sliced mushrooms and fry until caramelized.

I clean and discard stems. I cut them into slices. I melt some butter and put a clove of crushed garlic in it and saute them
until they are ready.

You can sautee mushrooms whole in a skillet with some butter and minced garlic (or garlic powder or garlic salt). Or, you can slice them in half and grill them ( I grill mine on my George Foreman).
