How are the molecules arranged in the three substances that affect their properties of expansion?

...and that we know exist suddenly cease to exist? What would become of our memories of them, the knowledge of them, would that abruptly be wiped out? For example, if we are someday able to travel back in time and stop Hitler from exterminating thousands of people. If suddenly he did not have a hand in killing them and they lived, how would that change the time we are living in now? If we travelled back in time today and changed history, would my knowledge change? What about the history written in books? Would it be instantaneous? Would it leave a memory residue? For instance, if before we changed history, I travelled to a certain place, say Paris, regularly would I have that familiar deja vu feeling if I travelled there after we changed history, yet had never been there before within my new life? Could the human mind withstand a significant change in history? Will time travel ever be possible? And if it does, who will decide what we can and can not do with this ability?

Is our measurement of time universal? We think of our bodies aging by years here on earth. What I am curious about is if the human body ages at the same rate of time in space as it does on earth? If there is not any gravitational pull on our bodies in space, therefore less stress, do our bodies age at the same measurement that we use on earth? What has been the effects of space travel on the astronauts bodies? Have they studied this and what were the results?
In thinking about this, I wonder about our measurement of time and how correct or incorrect it might be. You can take two people of the same age and their internal organs can be drastically different due to genetic influences. So one 55 year old might actually be younger by the measurement of their internal organs than another 55 year old.

In keeping with the 2nd Law of Thermodynamics, all energy transfers are sloppy. This means that a great deal more energy must be put into something before you can hope to get even a minuscule percentage of that energy back. Because lipids contain such a high amount of energy that serves a wide degree of functions (they are used to power both biomechanics and automobiles), this implies that an even greater amount of highly specialized energy must first go into its production.
Considering that lipids are a biomolecule, produced only by living or dead organisms (right?), and are also essential for the survival of all living organisms, how could they be produced by non-biological means? Are there any theories? Any experiments? I am very familiar with the Urey-Miller experiment, but that only seems to apply to very basic, unshaped amino acids in an unusable ratio and under impossible circumstances. Any ideas would be appreciated.

while we know that water is H2O, how is it that we are so sure that it looks like three circles connected by two bonds of varying strength? how is it that chemists can be so sure about the structures of most molecules, and the innards of an atom? since you can't take a picture, you must guess, right? then why is it always taught with such certainty and authority?
