That way you can wear them either way. It kind of bugged me at first, but you don't even feel them. I can wear my scrubs inside or out.

In case you want something especially well stored away.
So anything in there won't fall out when you lean over, and either get lost or fall into an area you don't want it to fall into.
To save the laundry staff from inside-outing any scrubs thrown in the laundry wrong side out -- just lander them, and the next wearer can use pockets no matter how s/he puts them on.

So whatever you though was important enough to bring into the OR with you doesn't fall inside the patient, or whatever you are working on.
Most scrubs are reverable. If you find you have only one pocket and it is on the inside of your butt/chest...turn it inside out if bugs you.

When doctors change into their scrubs in a hurry they don't have to stop to check if they are inside out or not--there are pockets on both sides so they can never be "inside out".
