How is their an endless stream of water upstream to keep the waterfall going everyday, especially in hot countries where there isn't much snow?

I was just looking at this video from a waterfall in a hot country. The water arises in mountains that are about 8000 ft high. There isn't much snow since its by the equator. How does so much get water get produced to run the waterfall?

I have just changed my filter for my water filter jug and out of curiority I wanted to know what the inside of a filter was like to see how it works and so I smashed it with a hammer. To my surprised it was just full of little bead like stones. How do these bead like stones filter the water. And why is it neccessary to change a water filter every month or so??
