I guess your answer is, "Any month!"
I have tried this little experiment and found you can stand up eggs almost any time. I usually try a couple when I bring home the groceries while putting things away. Sometimes one or two are easy, sometimes more, sometimes none. Date or time of year does not seem to be an issue.
I believe that a more appropriate question would be, "Why stand up an egg?"

PS. Sometimes you end up with omelette.
