My mother is trying to make my wedding cake for me. She is taking a standard cake recipe and trying to make an 8", 10" and 12" cake for the wedding. Last night she made the 12" and, while the cake tasted no different, the consistency was different. It was denser and darker. Also, she said she experienced the following: she tried to cook it under the same temperature as her standard 8" or 9" and when checking on it saw that it had risen greatly and pulled away from the sides....later it flattened but with a hole in the center....after that it cracked severely. Can anyone give me any help on how to cook a red velvet wedding cake?

I don't use much, usually just for making bread, a bottle can last months. Does it need to be in the fridge?

How do you make your home-made subs come out delicious and sub-shoppy, not sandwichy?

Part of the key seems to be a vinaigrette with a hefty amount of oregano in it -- but I'm not sure why. It also seems like something needs to be pickled to move it from "sandwich" to "sub" -- not necessarily pickles; pickled hot peppers work well.

Any more tips?

Does anybody know the perfect recipe for chip shop batter?

I've tried various recipes for deep frying cod the good old English way but none ever turn out like a fine deep fried cod from the local chippy. I tend to find that the batter cooks well before the fish and then burns by the time the fish is cooked.
I tried asking numerous chippies but none are willing to give up their secret! Any help would be apprieciated???
