I am trying to decide between Chicago Cutlery Landmark set and an Anolon set.

Honestly, they are both crap compared to Wustoff or Henkels (german made Henkels,. not the Chineses crap Target sells), but given the choices you preseneted, I'd go with the Chicago.

I'd MUCH rather have 2-3 great knives than any of the choices you listed. A Wustoff or something comparable.

a reliable much less costly variety is Forschner, All you desire is approximately 3 knives, watch cooking exhibits and notice how they use their knives. some chop with a splash knife, some with a chefs knife and others with a santuko, It does not pay to purchase a huge much less costly set, Sharpness is the main element.
