Other - Europe

We are flying from Minnesota on Sept 14 to Amsterdam and then we are staying in europe until November 14. Im wondering if anyone out there has gone on a similar vacation with a significant other Im trying to find places to stay on a reasonable budget and Im not sure how hostels will work since we would like to sleep together and have some privacy any ideas? I tried contacting hotel. They replied back on July 6 and asked me to confirm. I tried 4 times since then- no responses from them. I tried finding a travel agent (only UK agencies offering 7 nights). We can only stay 4 (Oct. 14 arrival/ Oct. 18 departure) and need a twin room. ANY suggestions on how to book or an agency would be appreciated.
